Crash point = 0.97 ÷ (1 − u), where u is a fraction read off the roll hash. That formula is what makes the chance of reaching any multiplier m equal 0.97/m: about 48.5% for 2×, 9.7% for 10×, 0.97% for 100×. The 0.97 is the house edge, and it applies to every cash-out target equally.
The number exists before the plane moves. Nothing you watch during the flight predicts it, which is why "predictor" apps and signal channels for this game are always scams.
